I’ve been meaning to start a food journal for a while. Mostly because I’ve eaten some really rotten food out there and bad places deserve attention. However recently I’ve been influenced to think more positive by a colleague at work. So in an effort to make someone else meet their goals and objectives for 2006 I submit my first food review.
My first review is Rack of Lamb prepared by Regina Chennault. The picture to the left does not do justice to the succulent dish that Regina created. But before I get into the meat of the matter let me start with what is on the plate. Rack of lamb from Costco, bag of salad and pasta from Safeway (generic). Regina whipped it all together in less than 30 minutes (each your heart out Rachel Ray).
The lamb was accompanied by a basil and mint yogurt dipping which really helped mask any possible gamy taste that lamb can sometime have (this rack did not). The pasta (which I had a tiny nibble) was a sun dried tomato and garlic combination that was heavenly. Finally the salad was dressed up with feta, tomatoes and cranberries which help balance the heavier taste of the pasta and lamb. It was simply amazing and I was surprised (although I shouldn’t be) at this flavor sensation. In the end the portions were just right and I was a very impressed and proud husband.
Regina is a wonderful cook and even better wife and mother. I have said this in the past but it bear repeating that without her I wouldn’t be where I am today. I’d also be about twenty pounds thinner! I look forward to posting more reviews of Regina’s cooking and other places along the way. Happy eating!
Not a fan of lamb but the dish still looks great.
